Yusheng literally means raw fish. However, in Chinese it sounds like yu sheng which can be interpreted as an increase in abundance. Became a symbol of wealth, prosperity and good fortune.

1. The main material
Prepare 1 peeled carrots, 1 stalk of white radishes, 1 cucumber, 2 tablespoons red Japanese pickled ginger, 50 grams of fruit pomelo or grapefruit, red and green food coloring, oil for frying and candied orange peel, ginger, and enoki mushrooms.
2. Supplementary material
To complement, 1 tablespoon toasted sesame seeds, 1 tablespoon finely chopped roasted peanuts, 1 teaspoon ground cinnamon, a pinch of white pepper, 1 tablespoon extra virgin olive oil and fried dumpling skins are cut small.
3. Sauce
