Ingredients to make the cake sweet potato pancakes
1 piece of sweet potato
2 cups of oats
2 tablespoons olive oil (optional)
1 tablespoon dark molasses (optional)
4 eggs
1 egg white
2 teaspoons vanilla extract
2 teaspoons ground cinnamon
1 cup plain yogurt
How to make sweet potato pie pancakes:
Prick-prick sweet potato several times with a fork.
Wrap in paper towels and cook in the microwave for 5 minutes on full power, or until tender.
After a rather cool, and peel the skin with a small knife.
Meanwhile, process the oats in a blender or food processor until powdered.
Move oats into a large bowl.
Cut the sweet potatoes and yams enter into a food processor. Blend until smooth.
Put into a bowl containing the oats, and stir in the olive oil, sugar syrup, egg, egg whites, vanilla, cinnamon and yogurt.
Test the viscosity of the dough with your fingers according to what you desire by adding more yogurt if necessary.
Rub a little butter, then heat a skillet over medium heat.
Pour 1/4 cup batter into skillet full of hot moment, and cook until bubbles appear on the surface.
Turn and cook the other side until browned.
Continue with remaining dough.
